Green Shiso – Herb of the Gods
It’s a mystery, really. Why had I not tasted it before? Green shiso is a key herb in Japan. It’s like basil to Italians. Or coriander to Mexicans. Yet here, in Britain, it is almost unknown. I grew it in bulk for the first time last year, and it has transformed my cooking. It’s both powerful and aromatic, with echoes of basil or mint. In Japan, it is often paired up with sashimi. Here, the fresh leaves are imported and pricey – which is why take-away boxes of sushi sometimes have a strip of corrugated green plastic – this is symbolic of the jagged leaves of the herb.
